Salmon fillet with Jersey Royal, horseradish, yoghurt, dill, capers

Salmon fillet

Vegetable oil

Method: Hot pan, oil in, salmon skin side down and roast it until is skin crispy, then flip over and cook about 2 min from the other side. Put salmon into oven for 3-4 min 200°C. Depends on the size of your fillet.


Jersey Royal

Dressing:

Lemon juice

Capers

Dill

Olive Oil

Jersey Royal potatoes

Water

Salt

Method: Cook the pots in water. Put generous amount of salt to achieve salty potatoes. In that time mix lemon juice, capers, chopped dill and olive oil together. When the pots are cooked. Drain them and mix with the dressing. Serve immediately.


Yoghurt sauce

Yoghurt

Fresh horseradish

Garlic

Salt

Lemon juice

Method: Grate horseradish into yoghurt then add clove of garlic, lemon juice. Taste and season with salt.
