Thai curry w/ coley fillet and prawns


Rice

Jasmine rice

Cardamom pods

Water

Salt

Method: Wash the rice properly, then cook together with crushed cardamom pods. Don't forget to put some salt into water with rice.


Curry

Step 1

Paste:

Garlic

Chilli peppers

Plum tomatoes

Fish sauce

Fresh turmeric

Fresh ginger

Lemon grass - finelly diced

Coriander seeds - grounded

Tamarind paste

Onions

Palm sugar

Ground nutmeg

Method: All ingredients blitz to shit


Step 2

Sunflower oil

Lemon grass - crush it with back of the knife or with fucking hummer

Lime leaves

Curry paste

Method: In pan get hot oil and put in both ingredients. Fry for a while

Put the paste in and cook for 2 min.


Step 3

Boiling water

Coconut milk - unsweetened

Method: Add both ingredients and cook another hour. Then pass thru sieve. Season with lime and salt.


Fish

Coley fillet - skinless

Prawns


Method: Coley fillet pan roasted together with cleaned prawns about 1 min. Then pour the curry over the fish and prawns cover with the lid and cook until fish and prawns are cooked. About 4-5 mins. Depends on size of your fish fillet.


Serve with micro coriander leaves and chilli flakes


Note

Any skinless white fish (cod, halibut, haddock) will work for this recipe.
